Peaches and pork chops…I mean what else could you want for a perfect summer meal? This is a favorite, easy to make summertime meals that gives you all the summer feels.

We love getting some fresh local peaches at the farmers market and combining that with our pork chops for a family favorite.  

Try this fantastic meal with some simple rice or mashed potato sides and a veggie and you will not be disappointed!!

Peaches and Pork Chops!

Ingredients

  • - 4 C&F Farms boneless or bone-in pork chops
  • - 2 tablespoons olive oil
  • - 1 tablespoon butter
  • - 3 ripe peaches sliced
  • - 2 tablespoons brown sugar
  • - 1 teaspoon thyme
  • - ½ cup chicken stock
  • - Salt and pepper to taste

Balsamic Sauce

  • - ½ cup Balsamic vinegar
  • - 1 tablespoon Honey
  • - 1 tablespoon Oregano

Instructions

  1. 1. Remove the pork chops from their pack and pat dry with paper towels. Season both sides with salt and pepper.
  2. 2. Heat the olive oil in a pan over medium-high heat.
  3. 3. Add the pork chops and sear for 5 minutes, or until they are golden brown on one side. Flip the pork chops and continue to cook until they reach your desired doneness.
  4. 4. Remove the pork chops from the pan.
  5. 5. While the pork chops are cooking, slice the peaches in a large bowl and toss with brown sugar.
  6. 6. Add the butter to the pan and allow to melt.
  7. 7. Once the butter is melted add the peaches and let them cook for 2-3 minutes, until they are starting to smell really sweet!
  8. 8. Mix in the chicken stock and thyme and let it simmer until the liquid reduces by half.
  9. 9. Nestle the pork chops back into the pan and use a spoon to help pour some of the peach juices over the chops.
  10. 10. Serve pork chops with some balsamic glaze poured over the top.
