Chicken Breasts with Tomato and Herb Sauce

With hints of a Tuscan flair, this recipe would be amazing over some angel hair pasta or some jasmine rice!
Ingredients:
- 4 chicken breasts
- 3 cups fresh tomatoes, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh oregano, chopped
- 1/2 cup onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add onions and garlic, cooking until softened.
- Add tomatoes, parsley, and oregano. Cook until the tomatoes are softened and the sauce has thickened, about 10 minutes.
- Return the chicken to the skillet and simmer for a few more minutes to heat through.
- Serve the chicken with the tomato and herb sauce on top.
