Chicken Breasts with Tomato and Herb Sauce

With hints of a Tuscan flair, this recipe would be amazing over some angel hair pasta or some jasmine rice!

Ingredients:

  • 4 chicken breasts
  • 3 cups fresh tomatoes, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh oregano, chopped
  • 1/2 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add onions and garlic, cooking until softened.
  5. Add tomatoes, parsley, and oregano. Cook until the tomatoes are softened and the sauce has thickened, about 10 minutes.
  6. Return the chicken to the skillet and simmer for a few more minutes to heat through.
  7. Serve the chicken with the tomato and herb sauce on top.
